The French artisan chocolatier, French Bernard open his first cafe in Singapore in 2006 - Laurent's Cafe & Chocolate Bar in Robertson Quay. Since its inception, the cafe has rose to fame for their chocolate souffle and hot chocolate. Laurent Bernard Chocolatier has received The Best Chocolates Award from Singapore Tatler's The Best of Singapore four years consecutively, from 2011 to 2014.

Thanks to our Singaporean friend Kimberlyn, we managed to try the amazing chocolate souffle here. 

The restaurant boasts a cozy environment that makes it best for a relaxing evening. An array of sophisticated cakes are being displayed at the counter, rendering those having a sweet tooth will scream in craze upon walking here. There is even a designated counter offering various ice creams, and our friend's appetite was caught by the Pistachio ice cream. 

Souffle is made on the spot upon ordering, thus you will have to wait for about 30 minutes. Luckily we have ice cream to savour in between the waiting time!

We had two souffle - Chocolate Souffle and Rum & Raisin. The souffle is served plumpy, and having a syringe like item to pump the filling into the souffle, then you can pour the liquid onto/into the souffle. 

The fluffy and light texture of the souffle allow us to indulge in these desserts pleasantly. It is akin the texture of condensed version of cotton candy. When we dug our spoon into the souffle, everything come out intact as a mass and did not fall apart, signifying a perfectly cooked souffle.

Needless to say, the chocolate is a heaven to enjoy. It offers a pleasant sweet taste that comes with a slight bitterness of the cocoa. For one person to finish the entire chocolate souffle may be surfeiting, hence it is best to share it among two or more. Meanwhile, Rum & Raisin is lighter in taste and allow you to taste the subtle taste of the souffle.
